Description: Moderately widespread in the French regions along the northern part of the Rhone, from which it originates, the Viognier vine has for some years now found a great welcoming from Sicilian wine growers and more recently in Alto Monferrato, where some areas have been identified as ideal for this grape cultivation. Therefore, the production of very interesting wines has started in which the aromatic characteristics of the vine itself are exalted.
This is how Lipiai was born, a toponym that indicates a hill in Vaglio Serra particularly vocated to the cultivation of vines, characterised by a large plateau on the top, on which white grapes were traditionally grown. The name of this hill perhaps derives from the flat land where kids would gather to play the ‘Gioco della Lippa’, an ancient game in which two wooden sticks were all that was needed for company. A name that recalls conviviality and lightness, suitable for this wine perfect for an aperitif in company.
Harvest:Beginning of September, the harvest is preferably carried out in the morning so that the grapes can be delivered fresh to the winery during the day.
Vinification: The entire grapes are soft-pressed and the clear must is separated from the cloudy must. The alcoholic fermentation is very slow and takes place in reduction in stainless steel tanks at a temperature controlled from 15 till 17 °C and lasts for about 20 days.
Ageing: Once alcoholic fermentation is complete, the wine is racked into concrete tanks where it remains for 5 months. Finally, the wine remains for about 3 months prior to be released.
Pairings: seafood starters, smoked salmon, filled vegetables, white meats and fresh pasta summer style with fresh tomatoes and basil.
Serving temperature: 8-10°C
TASTING NOTES
The wine has a clear and brilliant straw yellow colour. The nose is aromatic and fresh with flowery aromas which recalls white flowers such as acacia blossom and citrus fruits. The palate is savoury, fresh and persistent.
